Harira Soup: The Power of Moroccan Cuisine

How a simple ingredient of a silky soup brought down a governor.

Let us travel to Morocco today to prepare harira soup, a staple and must have dish during the month of Ramadan. Traditionally, the Moroccans break their fast with a cup of harira soup and a side of dates and a honey-soaked treat called alshubakia.

Some call the harira soup the dish that overthrew the governor of Córdoba, Spain.

Here are the ingredients that you will need:

Ingredients:

  • 1lb lamb or beef stew meat
  • 1 can chickpeas
  • 1 cup lentils
  • 1 large, sweet onion
  • 1 can diced tomatoes
  • 2 tablespoons butter
  • 1/4 cup of vermicelli
  • 2 tablespoons of flour
  • 2 tablespoons tomato paste
  • 1 cup chopped celery
  • 1 cup of chicken broth
  • Warm water as needed
  • Vegetable oil
  • Fresh chopped parsley
  • Fresh chopped cilantro

Spices

  • 1 teaspoon black pepper
  • 1/2 teaspoon saffron
  • 1/2 teaspoon ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon nutmeg

Preparation:
Place meat in a preheated pot with a little oil and sear on all sides. Add onions, lentils, celery, ginger, spices, diced tomatoes, chickpeas, one tablespoon of butter. Add hot water, be generous with it as it will simmer for 45 minutes to one-hour, shorter time if you use pressure cooker, until the meat is tender.

For the last step of the recipe, in a small pan, melt another tablespoon of butter, add vermicelli, and stir until golden. In a small bowl, mix the flour, one cup of chicken stock, tomato paste and saffron. Add vermicelli and the flour mixture to the soup. Lastly, add parsley, cilantro and salt. Stir and boil for another 10 minutes to obtain a homogeneous mixture.

Serve with dates and alshubakia. Enjoy!
